These chicken fritters are the fancier cousins of chicken nuggets! And, like nuggets, children appear to adore them. They’re great on their own, as little chicken patties in chicken sliders, or as a side dish with your favorite meal! 

These fritters are packed with the most delicious and classic taste in every mouthful, making them the ultimate chicken snack. They’re ideal for game days or entertaining guests, and you can easily double the recipe to satisfy a large group.

5 lbs. – chicken breast

2 large – eggs

1 small – yellow onion

2 large – garlic cloves

¼ cup – mayonnaise

1 tsp. – Mrs. Dash seasoning

1 tsp. – salt (or to taste)

¼ tsp. – black ground pepper (or to taste)

½ cup – flour

How to Prep Chicken for Chicken Fritters

Begin by soaking clean chicken breasts in cold water for a couple of hours, changing the water on a regular basis. This is entirely optional, however it is my preferred method of cooking meat while ensuring that it is completely clean.

Remove all of the fat from the chicken breasts and rinse thoroughly. Place clean creatures in a strainer to drain excess water.

The chicken should then be cut into 1″ cubes. To make mixing easier, place the chicken cubes in a big mixing basin.

How to Cook Chicken Fritters

Now, over medium-low heat, heat a large nonstick skillet or frying pan. If your stove is digital, the answer is 3.5.

Pour in 2-3 teaspoons olive oil to the pan. When the oil is hot, add one large ice cream scoop of chicken mixture to the pan and flatten into a fritter.

As the fritters splatter during sauteing, I like to cover the skillet with a Frying skillet Splatter Screen Guard to catch the majority of the splatter. A normal lid holds the steam, whereas a screen guard allows the steam to escape but prevents splattering.

This is an optional step, but I adore the results; I’ve found that covering the fritters with a pan lid causes them to water, release their juice, and then become too dry.

Fritters should be cooked for 5 minutes on each side. To ensure the meat is thoroughly done, I saute it for a little longer at a lower temperature. Then flip the fritters over and cook for 5 minutes more.

When finished, move the sauteed fritters to a plate or cutting board lined with paper towels to soak up any leftover oil, then transfer the fritters to a serving dish of your choosing before transferring another batch to the lined paper towel surface.

It is possible that you will need to replace the paper towels every few of batches.

How to Store Leftover Chicken Fritters

If you have any leftover chicken fritters, you can keep them in the fridge in an airtight container for up to 3 days. If you want them warm, reheat them in the microwave or on the stovetop before serving.

Leftovers are ideal for packing in lunch boxes the next day or for making tiny picnic sandwiches. Larger patties can also be made for excellent sandwiches! You’ll adore these fritters whether you eat them warm or cold, even the day after you make them!

I wouldn’t recommend freezing these fritters because they won’t be as crispy. I recommend making these fresh because they’re very simple to make!
