Ingredients for Simple Flourless Banana Panque

▢2 cups blanched almond flour
▢2 tablespoons sugar * See notes
▢1 teaspoon baking powder
▢1 teaspoon cinnamon
▢1/4 teaspoon salt
▢2 large bananas mashed
▢2 large eggs Can sub for 2 flax eggs
▢1/2 cup coconut oil
▢1 teaspoon vanilla extract

Instructions for Simple Flourless Banana Panque

Preheat the oven to 350 F/180 C. Grease a loaf pan or a 10 × 10 square pan and leave aside.

In a large mixing basin, add the dry ingredients and stir thoroughly.

In a separate bowl, melt the coconut oil.

Combine the mashed bananas and eggs and stir together.

Combine the wet and dry mixtures and stir until well combined. Pour into a buttered pan.

Bake for 40-50 minutes (square pans typically take around 40 minutes, loaf pans 45-50 minutes), or until a toothpick inserted into the center comes out clean.

Let cool in the pan for 10 minutes before transferring to a wire rack to finish cooling. Slice and enjoy.

NOTES:

Leftover banana bread slices can be kept in an airtight jar at room temperature for up to three days. If you want your bread to last longer, store it in the refrigerator for up to a week. Place cooled leftover bread in a freezer-safe container and freeze for up to six months.
